Herbalism picks herbs from the world for Alchemy, and it sells well on the Auction House from day one. It needs no other profession, and every herb you pick on the way is a skill-up while it's orange or yellow.
How gathering skill-ups work
Every herb has a skill requirement. Gathering it gives a skill-up based on how far above that requirement you are:

Forever also adds new endgame herbs: Marefoil, Demonsage, Death Lotus. Their skill requirements aren't in the game data yet.
Training
Train Journeyman Herbalism at 50, Expert at 125 and Artisan at 200. Each raises your cap by 75.
Cultivation for Tauren
Tauren in Forever can cast Cultivation on an herb before picking it for a free extra herb. ForeverArtisan's herb tooltips say when it's ready, and learn each herb's level requirement from your own casts.
Herbalism camp items
Herbalism makes three camp items for Forever's campfires: the Incense Candle at 20 (+Intellect), the Greenhouse at 140 and the Seed Hybridizer at 300. See the professions guide for how Camping works.
